Why You Should Never boil eggs?

Hard-cooked eggs should never be boiled – always simmer them in water. If you cook them for too long, the protein toughens (becomes rubbery) and a greenish or purplish ring forms around the yolk.

How do chefs boil eggs?

Put em on the stove top and bring to a boil for 12 minutes (at sea level) from start to finish. Timer goes off and I place the pot on the sink and add ice. 5 minutes later they’re easy enough to peel without having the whites stick to the shell. Also I don’t make more than 25 or 30 max per batch.

Why do you put vinegar in water to boil eggs?

Add salt and vinegar to the water before cooking. The salt permeates the shell a little bit, and the vinegar helps to break down the shells, making them easier to peel.

Egg white solidifies more quickly in hot, salty water than it does in fresh. So a little salt in your water can minimize the mess if your egg springs a leak while cooking. The egg white solidifies when it hits the salt water, sealing up the crack so that the egg doesn’t shoot out a streamer of white.

What makes egg shells stick to hard boiled eggs?

If an egg is fresh, the pH of the white is super low, which causes it to stick to the shell membrane. I recommend purchasing an extra carton of eggs each week, use one for omelets and scrambled eggs, and reserve the extra carton for hard-boiled eggs the next week. Perfectly cooked eggs have bright and yellow yolks.
